Major In Crepe-ology at Restaurant

SAFETY HARBOR, Fla. - SAFETY HARBOR, Fla. - A few weeks ago a local couple went public with their craving for French-style crepes.

Pam and Kurt Bollenbacher recently opened a downtown restaurant specializing in a wrap that is much more than dessert.

They refer to the crepe-based eatery, Crepe-ology, as a casual-style "study in good eats."

A European-style crepe is a thin, delicate pancake wrap made from flour, eggs, milk and butter. Its thinness allows for the enjoyment of flavorful ingredients.

When most locals think of crepes they think of the thicker variety used for sweet desserts, said Pam Bollenbacher, who opened the eatery a few weeks ago with husband Kurt, a crepe chef.

Thin European-style crepes come in two varieties, sweet for desserts and savory as a wrap for main dishes.

At Crepe-ology the main-course fillers include beef, smoked salmon, roasted vegetables, chicken and mushroom, and ham and cheese. There is even a Cuban crepe.

A variety of the more well-known sweet dessert crepes are also available.

All ingredients are made fresh, with no pressed meats used.

The idea of opening a restaurant specializing in crepes, Pam said, came about after they enjoyed the treat in the south of France. In Europe crepes are a mainstay.

Then at a horse show in West Palm Beach they noticed the crepe kiosk was getting the most attention.

Pam, who also works at home as a medical claims analyst, said she and Kurt always talked about making their dream of opening a restaurant in their hometown a family business.

The couple decided crepes would be their specialty because they would stand out among all the rest of the area restaurant fare.

They recently opened Crepe-ology in a former coffee house at the corner of Fifth Avenue and Second Street North. She and Kurt love the beautiful location, with a porch shaded by majestic trees, Pam said.

Crepe-ology is downtown, just a block or two off Main Street.

The city's recent ban on off-site sandwich board signs has them a little worried because they are a new business that needs directional advertising, Pam said. In fact, many would-be patrons are still searching for their little yellow-colored restaurant, she said.

The Bollenbachers, like many other downtown off-Main Street merchants, wonder whether pole-mounted directional signs, the City Commission approved alternative to sandwich signs, will work.

More and more people, however, are hearing about Crepe-ology by word of mouth every day, Pam said. She walks door to door handing out menus and explaining about the tasty crepe, soon to be the culinary talk of the town.

Crepe-ology is open from 11 a.m. to 7 p.m., Monday through Thursday, and 11 a.m. until 8 p.m. on Friday and Saturday. It is closed on Sunday.
